Many of my clients tell me that it’s difficult to keep eating healthy during cookout season.  One easy solution is to make a healthy dish or two to bring to parties and celebrations so you can ensure at least a few healthy options.   One of my go-to recipes for this is my Red, White and Blue Fruit Pizza.  It goes over so well that even friends and family who aren’t eating healthy rave about it.

My favorite brand of gluten-free oat flour is Bob’s Red Mill!

Instructions
  1. Preheat oven to 350 degrees. Grease 10" cake pan with baking spray and set aside.
  2. In a large mixing bowl, combine oats, oat flour, cinnamon, vanilla and salt together. Add the honey and coconut oil and mix until dough is combined and sticks together.
  3. Spread mixture into greased pan and press down firmly with a spatula.
  4. Bake for 10 minutes. Remove from oven and let cool completely. (Place in fridge or freezer to cool faster.)
  5. Meanwhile, in a medium mixing bowl, combine maple syrup and vanilla extract. Spread yogurt over cooled crust.
  6. Decorate with fresh berries. Enjoy immediately or place in the fridge!
